ANZAC Biscuits

Prep Time: 5-10 mins      Cook Time: 20 mins      Makes: 12-16 (approx.)

Ingredients

2 cups plain flour

1 cup sugar

1 cup rolled oats

1 cup desiccated coconut

150g butter

2 tablespoons golden syrup

1/2 tsp bicarb soda

Method

Preheat oven to 180C. Combine all dry ingredients in a large bowl.

Melt butter and golden syrup in a small saucepan over medium heat. When melted and combined, add bicarb soda to a small bowl, mix with 2 tablespoons boiling water and add to butter mixture.

Make a well in the centre of the dry mixture, pour in the wet mixture and stir using a wooden spoon until it forms a dough.

Take 2 tablespoonfuls of the dough, roll into a ball and place onto a baking paper lined tray, making sure to leave gaps in between each ball. Bake in oven for 15-20 mins or until golden and cooked through.

Notes

When adding the bicarb soda to the butter mixture, you want to add it and stir it quickly as it can react. Before adding the bicarb, mix it in a small bowl with 2 tablespoons boiling water, then quickly add and stir, remove the saucepan from the heat and immediately add to the dry mix.

To make it easier and safer to measure the water, pour the required amount of water (for this recipe, 2 tablespoons) into a small saucepan and bring to a boil, making sure not to reduce it down to nothing.

To make Chocolate Anzac biscuits, just add 1/2 cup cocoa powder and 1/2 cup dark chocolate chips to the dry mixture.
