Chicken Parcels

Prep Time: 10-15 mins      Cook Time: 30-40 mins      Serves: 6

Ingredients

4 sheets puff pastry, thawed

3-4 skinless chicken breasts, cut into 1.5cm cubes

Garlic herb butter, see recipe

Grated cheese

1 egg, beaten with 3 tablespoons milk (see note)

Method

Cut each sheet of pastry into 4 squares, leaving the blue plastic at the bottom intact. Fill each square with one piece of chicken, a small dollop of garlic butter and a small pinch of grated cheese, assembling in the order below:

  • One piece of chicken
  • One small dollop of garlic herb butter on top of chicken
  • One small pinch of cheese on top of chicken and butter

Take the corner on the top left-hand side of the pastry square and connect it with the bottom right-hand corner, doing the same with the top right-hand and the bottom left-hand corner; folding the pastry and enclosing the entire parcel.

Place each parcel on a baking paper-lined tray and brush with egg wash (an egg beaten with some milk).

These need to cook in an oven preheated to 200C. These will need to cook for around 30-40 mins, or until the pastry  is golden brown and the chicken is cooked thoroughly.

Variants and Other Flavourings

There are numerous ways to flavour this dish. Other ingredients can also be added; even the flavoured butter can be swapped. Here are a few examples below which we recommend trying out:

  • BBQ sauce and crispy bacon bits
  • Indian spices (chilli powder, mild curry powder, turmeric, cumin, ginger, coriander seeds, garam masala) and coconut curry butter (see recipe)
  • Taco spice mix and roasted onion/capsicum
  • Mediterranean butter (see recipe), anchovies, sun-dried tomatoes
  • Frozen spinach (thawed and drained thoroughly), cooked mushroom slices, ricotta
  • Pizza sauce and pepperoni
  • Basil pesto, prosciutto and halved cherry tomatoes
  • Asparagus, roasted sweet potato and sliced brie or camembert cheese (in this case, omit grated cheese)
  • Sliced tomatoes, diced red onion and chopped parsley (a vegetarian alternative)
  • Other condiments, e.g. buffalo wing sauce, sweet chilli sauce, satay sauce

Notes

You can use olive oil instead of preparing an egg wash. If you wish to do so, brush the parcels with oil before baking. Using a spray can of oil will also work.

These are best served with a side of mixed salad leaves.
