Each recipe requires 200g softened butter. For each recipe, combine butter in a medium-sized bowl with your choice of the ingredients listed below.
Garlic Herb
1 tsp minced garlic
2 tablespoons chopped parsley
2 tablespoons chopped basil
Curry
1 tsp red curry paste (see recipe, more or less according to taste)
1/2 tsp mild curry powder (optional)
4 spring onions, thinly sliced
1 red chilli, deseeded, finely chopped
Zest of 1 lemon or lime
Thai-Style
1 tsp minced garlic
1 tsp minced ginger
1 red chilli, deseeded, finely chopped
1 stick lemongrass (white part only), trimmed, finely chopped
4 spring onions, thinly sliced
Handful coriander leaves, finely chopped
Zest of 2 limes
Mediterranean
1 tablespoon sun-dried tomatoes, drained, finely chopped
6 black olives, pitted, sliced
4 anchovy fillets, finely chopped
2 slices honey leg ham, finely chopped
2 slices mild salami, finely chopped
1 tsp minced garlic
1 tsp tomato paste
2 tablespoons chopped basil
Zest of 1 lemon
Notes
These work well on just about anything, from grilled or roast meats, fish, bread, or even vegetables, such as potatoes.
For extra flavour, 1/2 tsp chopped rosemary, 1/2 tsp thyme, 1 tsp chopped sage leaves and the zest of 1 lemon can be added to the garlic herb butter.
