For each recipe combine all ingredients in a large bowl and pour into a ziplock bag with your chosen meat.

Honey Soy Garlic
5 tablespoons soy sauce
2 tablespoons honey
1 tsp minced garlic
1/4 tsp black pepper
1 tablespoon brown sugar
2 tsp sesame oil
Works best on: Chicken, beef, fish
Lemon, Herb and Garlic
2 tablespoons chopped parsley
2 tablespoons chopped basil
1 tsp thyme leaves
1 tsp rosemary
2 tsp oregano
1 tsp minced garlic
Zest and juice of 2 lemons
1/4 cup olive oil
1/4 cup red wine (only if using red meat)
Works best on: Chicken, beef, lamb, fish
Chilli and Herb
2 red chillies, deseeded, sliced (the seeds can be kept if you like it hot)
2 tsp paprika
1/4 tsp cayenne pepper (optional)
1 tablespoon chilli sauce
1 tsp minced garlic
1/4 onion, finely chopped
1 tsp mixed herbs
3 sprigs rosemary
4 sprigs thyme
Juice of 1 lemon
1/4 cup olive oil

Ginger, Coriander and Lime
1 tablespoon minced ginger
1/4 bunch coriander, finely chopped
1 tsp minced garlic
Zest and juice of 4 limes
1 tablespoon soy or fish sauce
2 tablespoons vegetable or peanut oil
2 tsp sesame oil
Works best on: Chicken, pork, fish
Pineapple Lime
1 cup pineapple juice
1 tsp minced garlic
1 tsp minced ginger
Zest of 2 limes
Juice of 3 limes
1 red chilli, deseeded, finely chopped
1 tablespoon soy sauce
1 tablespoon brown sugar
Handful coriander leaves, finely chopped
Works best on: Chicken, pork
Spicy Peanut (Satay) *
1 cup unsalted peanuts, roasted
1 shallot, roughly chopped
1 tsp minced garlic
1 tsp minced ginger
1 stick lemongrass, white part only, trimmed
Handful coriander leaves
1/2 tsp cumin
1/2 tsp turmeric
1 tsp mild curry powder
1/2 tsp coriander seeds, toasted, crushed
1 red chilli, more or less depending how spicy you like
2 tablespoons soy or fish sauce
Zest and juice of 3 limes
3 tablespoons brown sugar (or 85g grated palm sugar)
2 tsp sesame oil
4 tablespoons vegetable or peanut oil

It is recommended to make these a day ahead. The longer your chosen meat marinates, the better the results.
