Schnitzel Crumbing 7 Ways

Each recipe requires breadcrumbs, fresh or dried. Panko breadcrumbs will also work. For each recipe, combine breadcrumbs and chosen seasoning in a large bowl or medium-sized baking dish

Ingredients

Classic Italian

2 cups breadcrumbs

5 tablespoons chopped parsley

4 tablespoons chopped basil

1/2 tsp oregano

1 tsp garlic powder

3 tablespoons grated parmesan

Salt and pepper

Lemon Pepper

2 cups breadcrumbs

Zest of 2 lemons

1 tsp black pepper (more or less according to taste)

1/4 tsp garlic powder

Salt

Spicy Chilli

2 cups breadcrumbs

1-2 red chillies, deseeded, finely chopped (more or less according to taste)

1/2 tsp chilli powder

1/2 tsp paprika

1/4 tsp garlic powder

1/4 tsp cayenne pepper (optional)

Salt and pepper

Coconut Curry

2 cups breadcrumbs

1/3 cup desiccated coconut

1/4 tsp turmeric

1/4 tsp cumin

1/2 tsp garlic powder

1/4 tsp chilli powder

1/2-1 tsp mild curry powder (more or less according to taste)

Zest of 2 lemons or limes

Pesto

2 cups breadcrumbs

2 tablespoons basil pesto

Zest of 1 lemon

Salt and pepper

Mexican

1 cup breadcrumbs

1 cup nacho cheese flavoured corn chips, crushed

1/4 tsp chilli powder

1 tsp taco spice mix

Zest of 2 limes

1 jalapeño chilli, deseeded, finely chopped

Honey Mustard

2 cups breadcrumbs

1 tsp mustard powder

1/2 tsp garlic powder

Salt and pepper

Notes

These recipes are not just for schnitzels. These also work perfectly on pork chops, lamb cutlets, fish fillets, chicken tenders, burgers, etc., or even bakes such as macaroni and cheese, smashed potatoes, etc.

Fresh or dried breadcrumbs can be used. We recommend using panko breadcrumbs for a crispier texture.

For the Mexican crumbing, you can use a standard red or green chilli instead of jalapeños.
