Ingredients
1-1.5kg turkey mince
1 onion, finely chopped
3/4 cup breadcrumbs
1 tsp minced garlic
1 tsp minced ginger (optional)
Handful coriander leaves, chopped
2 eggs, beaten
1 cup coconut milk
1/4 cup oyster sauce
Extra oyster sauce, for glazing
Method
Preheat oven to 180C. Fry chopped onions in a pan over medium-high heat until softened and slightly coloured. Transfer to a bowl and leave to cool slightly.
Combine mince, oyster sauce, breadcrumbs, onions, garlic, ginger (if using), coriander, eggs and milk in a large bowl until combined.
Line a loaf tin with baking paper. Add mince mixture to the tin, pressing it down to make it even. Cover with foil and bake in oven for 30 mins. After 30 mins, remove the loaf from oven, uncover and brush with extra oyster sauce. Return loaf to oven for another 30 mins, repeating the glazing and cooking method 4-5 times, until cooked all the way through.
Notes
This can be served with anything you like. For a more Asian meal, serve with steamed rice and stir-fried veg, or to keep it simple, serve with mash, veg and gravy. Other Asian flavours such as chilli and spring onion may be added.
If unable to find turkey mince in the supermarket, or if you don’t like turkey, just use chicken mince instead.
